Strawberry Cookie Tarts

This isn’t by any means a low-fat recipe, but it’s one of my more requested ones. When I realized it wasn’t already listed here, I had to fix that!

Strawberry Cookie Tarts

1/2 cup vegetable shortening

1 cup packed brown sugar

1/4 cup applesauce

1/2 teaspoon vanilla

1 3/4 cups all purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

Strawberry jam

Mix shortening, sugar, applesauce and vanilla thoroughly. Measure flour by sifting. Stir flour, baking soda and salt together; stir into shortening mixture. Form into a roll 2 1/2 inches across. Wrap in waxed paper, chill until firm.

Heat oven to 400 degrees. Cut cookies into 1/8 slices. Place half of the slices on ungreased cookie sheet a few inches apart. Spoon 1 teaspoon jam onto slices. Top with the other half of slices; seal edges with a fork. Cut a slit in the top so filling shows through. Bake for 8-10 minutes until slightly brown.
