Vegan Substitutions for Baking

I get asked about subs all the time, and I finally got around to compiling all of the subs I use onto one list. It’s most definitely not complete, but it’s definitely a great start. If you have any subs you use let me know, and I will add it to the list! This info is essential to new vegans!

Egg substitutes:

Each of these equals 1 egg:
Ener-G Egg Replacer – 1 ½ teaspoons mixed with 2 tablespoons warm water
¼ cup mashed banana (this could change the flavor of your recipe)
¼ cup applesauce (this could change the flavor of your recipe)
1 oz mashed or crumbled tofu
1 tablespoon soy flour mixed with 2 tablespoons warm water
1 tablespoon cornstarch mixed with 2 tablespoons warm water
2 teaspoons flax meal or ground flax seeds + 2 tablespoons warm water
¼ whipped moistened oats

Bulk egg substitute recipe:
1 cup potato starch
¾ cup tapioca flour
2 teaspoons baking powder
Mix together well and store in an airtight container
1 ½ teaspoons + 2 tablespoons water = 1 egg
1 ½ teaspoons + 1 tablespoon water + 1 egg white

Milk substitutes:

Use an equal amount to what your recipe calls for.
Almond milk, soy milk, rice milk, hazelnut milk, coconut milk….to name a few!
Buttermilk substitutes:
Both of these substitutes equal one cup of buttermilk.
2 tablespoons lemon juice + 1 cup non dairy milk
2 tablespoons vinegar + 1 cup non dairy milk

Gelatin substitutes:

Use an equal amount to what your recipe calls for:
Agar agar flakes
Arrowroot powder
Fruit pectin
Xantham gum

Butter substitutes:

Use an equal amount to what your recipe calls for:
Earth Balance vegan margarine

Honey substitutes:

Use an equal amount to what your recipe calls for:
Brown rice syrup
Agave nectar
Molasses
Maple syrup

Cream substitutes:

Use an equal amount to what your recipe calls for:
Soy or coconut milk creamer

Dry milk substitutes:

Use an equal amount to what your recipe calls for:
Powdered rice or soy milk

Cream cheese substitutes:

Use an equal amount to what your recipe calls for:
Tofutti Better Than Cream Cheese
Daiya Cream Cheese

Yogurt substitutes:

Use an equal amount to what your recipe calls for:
Silk yogurt
So Delicious yogurt
Whole Soy yogurt
O’Soy yogurt
